Raw coco-choco truffles
soft truffles with coconut, cacao and almond paste
Ingredients:
- 2 tbsp shredded coconut
- 1 tbsp cocoa
- 3/8 cup almond paste left from almond milk making
- 5 pitted dates
- 1 tsp maple or agave syrup
- shredded coconut as needed
- blend all ingredients together
- handle little amount of dought and roll between palms to make little balls
- into a little dish (I used a jar plug) pour some shredded coconut and dip thereinside one ball by one, assuring all its surface to be covered of coconut flakes
- carefully put them into a airtight container and store in the fridge or even in the freezer
These bites have a really soft and enfolding texture; The coconut, besides, give to them such a freshness due to which you won't be able to stob eating them and, as it happened to me, they will be eaten in ten minutes or so, without even the time to put them into the fridge ;)
