Raw coco-choco truffles

Raw coco-choco truffles

soft truffles with coconut, cacao and almond paste



Ingredients: 
  • 2 tbsp shredded coconut
  • 1 tbsp cocoa
  • 3/8 cup almond paste left from almond milk making
  • 5 pitted dates
  • 1 tsp maple or agave syrup
...to cover..
  • shredded coconut as needed
Method:
  1. blend all ingredients together
  2. handle little amount of dought and roll between palms to make little balls
  3. into a little dish (I used a jar plug) pour some shredded coconut and dip thereinside one ball by one, assuring all its surface to be covered of coconut flakes
  4. carefully put them into a airtight container and store in the fridge or even in the freezer







These bites have a really soft and enfolding texture; The coconut, besides, give to them such a freshness due to which you won't be able to stob eating them and, as it happened to me, they will be eaten in ten minutes or so, without even the time to put them into the fridge ;)

Raw coconut freezy dessert

with coconut and almond milk


Ingredients:
1 cup almond milk
3 tbsp shredded dehidratet coconut
2 tsp agave syrup

Method:

  1. mix all ingredients togeter at room temperature, into a reclosable box
  2. let the mixture rest at least one hour long to slightly rehidrate the coconut
  3. close and put into the freezer
  4. stir every 20 minutes until ice flakes will be formed around every coconut flake
NB. an ice layer will occasionally form on the inside walls of the box; remove and break it every time it happens

....Serve it into small /coffee cup size) portions and relish in front of the fireplace in the tavern <3 .

Raw vegan pistachio and clementines treats

Raw vegan pistachio and clementines treats

with hazelnuts, grapes and desiccated apricots



Ingredients:
  • 3/8 cup (60g) shelled pistachios
  • 3/8 cup (50g) shelled hazelnuts
  • 1 tsp sesame seeds
  • 1/4 desiccated apricots (about 4 apricots, or 30g)
  • 1 tsp desiccated raisins
  • grated rind of a clementine, and juice of half a clementine
  • 1 or 2 tsp agave or meaple sirup, to taste
  • shredded coconut as needed

 Method: 

  1. ground pistachios, sesame seeds and hazelnuts togeter
  2. add chopped apricots, raisins, clementine rind and juice and the sirup and blend again 
  3. sprinkle coconut above a sheet of baking paper or aluminium foil one and, with aid of a spatula, spread the mixture smoothly
  4. sprinkle again with coconut over the mixture smoothed and freeze for about 5-10 minutes before cutting it






 ...I cutted it into little triangles but the shape doesn't matter. Interpose a piece of baking paper or aluminium foil between a treat and another one and keep them in the freezer. I recommend you to eat it at freezer or fridge temperature to emphasize flavours and also because the texture is better at that temperature...

Raw pear, coconut and walnut parfait

RAW  Pear, Coconut and walnuts parfait

...with apple juice...




Yesterday, at the supermarket till, the checkout operator saw my shop and asked me: '' don't tell me you're going to make coconut pears??!!...
I had never tought about that combination but the idea intrigued me. So today, early in the morning, I had a great breakfast, not too sweet and really satisfying
!

Ingredients for 4 people:

  • 4 pears, about 150g each
  • 4 tbsp shredded coconut
  • 8 walnuts
  • 4 tsp cocoa (or cinammon, for a sweeter and spicier taste)
...method...
  1. with a fork or using the mixer, turn 2 of the 4 pears, peeled, into pulp, add the shedded coconut and mix all together.
  2. without peeling them, cut the remaining pears into little cubes.
  3. using a knife, cut walnuts until they reach the size about 2 or 3 mm.

 ...composition...
  1. layer alternately, pear cubes, coconut-pear cream, walnut chunks, cubes, cream, and so on.....
  2. continue until ingredients are finished.


For the last layer, before walnuts, sprinkle some cocoa or cinammon over the coconut-pear cream.


 Ready to serve:


...Accompanied by some apple juice or, If you want, some almond milk I's great!...
