Raw coco-choco truffles

Raw coco-choco truffles

soft truffles with coconut, cacao and almond paste



Ingredients: 
  • 2 tbsp shredded coconut
  • 1 tbsp cocoa
  • 3/8 cup almond paste left from almond milk making
  • 5 pitted dates
  • 1 tsp maple or agave syrup
...to cover..
  • shredded coconut as needed
Method:
  1. blend all ingredients together
  2. handle little amount of dought and roll between palms to make little balls
  3. into a little dish (I used a jar plug) pour some shredded coconut and dip thereinside one ball by one, assuring all its surface to be covered of coconut flakes
  4. carefully put them into a airtight container and store in the fridge or even in the freezer







These bites have a really soft and enfolding texture; The coconut, besides, give to them such a freshness due to which you won't be able to stob eating them and, as it happened to me, they will be eaten in ten minutes or so, without even the time to put them into the fridge ;)

Raw coconut freezy dessert

with coconut and almond milk


Ingredients:
1 cup almond milk
3 tbsp shredded dehidratet coconut
2 tsp agave syrup

Method:

  1. mix all ingredients togeter at room temperature, into a reclosable box
  2. let the mixture rest at least one hour long to slightly rehidrate the coconut
  3. close and put into the freezer
  4. stir every 20 minutes until ice flakes will be formed around every coconut flake
NB. an ice layer will occasionally form on the inside walls of the box; remove and break it every time it happens

....Serve it into small /coffee cup size) portions and relish in front of the fireplace in the tavern <3 .

garnished with dessicated apricots and pomeganate seeds












...as I promised you, I finally managed in giving you the recipe of an all-natural, raw and vegan, banana ice cream which needs only one ingredient to be prepared, without considering the garnishment, for sure.

The recipe had been ready to be published for two weeks yet really. I only needed the time for doing it, because of the amount of things I had to do and to study.

All things considered, I'm sure you'll be happy with trying this recipe because it's easy, quick, and it only needs 1 INGREDIENT, fine thing, isn't it?? Here's how to do it...:

Ingredients for each person:
...for the ice cream...
  • 1 big banana
...to garnish...
  • 1 desiccated apricot
  • 2 tbsp pomegranate seeds
Method:
  1. cut banana into chunks and put them, onto a sheet of baking paper or aluminium foil, into a container, into the freezer all along a night.
  2. aside, half open longitudinally the apricot; cut out two hearts from them and hash what is left
  3. just before serving, take out banana chunks from the freezer and blend them into a food blender until having a smooth cream
  4. finally serve it into a cup, garnished with apricots hearts and crumble and with pomegranate seeds
And here it is, ready to relish:

Raw-vegan walnut milk

...I know, I know... I'm not entirely raw-vegan, I'm still changing my habits and it is for this reason that most of the recipes in the blog are sweet, forgive me please :) I began with changing my breakfasts and snacks first, not to put too much difficulty in my family , with whom I'm quite close, referring to eating habits. 

I managed to completely remove diary products and most of packed meals from my diet; My breakfast are mainly raw-vegan: only sometimes I have some toast with jam ;) .... at school I always bring with me some fresh or dried fruit and, only if I don't have any at home, I remedy with a packet of organic corn creakers, because I never have enough money with me to buy some fresh orange juice, even if relatively cheap (1€ per glass).

My meals also abound in fruits and vegetables , raw or cooked , it depends .... I still eat meat but not so much, I prefer legumes and , for lunch, pasta ... rice... soup with croutons .... ... always accompanied with a fruit.

My closer goal is to be able to have at least two raw-vegan meals per week, not being able to remove all of the meat from my diet yet. I have set a deadline at the end of February, hoping to be able to respect it. 

You know , sometimes it is a bit hard to see who lives with me eating pralines , chocolates , puddings , sweets and snacks of all kinds, in every moment of the day . I'm sad, firstly because they have no love for themselves, secondly because sometimes, I have to admit it, I miss bit those chocolate snacks , freshly baked hamburgers other not diary-free things ... but I am sure that , improving my cooking skills, I'll be able to prepare valid vegan alternatives, and even raw ones, to those succulent dishes! 

During these days I came up with a particular desire : milk;I'd been without having a nice cup of milk for months! I spent hours thinking about what I could do to solve my problem until I saw all the nuts, left from Christmas holydays, staying there without being eaten. So I thought, " Why couldn't I make some nut milk if it can also be donewith hazelnuts and almonds?? " So I started working and here's the recipe of my delicious nut milk:

Ingredients for 1/2 l of walnut milk:

  • 1/2 cup walnuts
  • 1/2 l water
  • 2 o 3 tsp sweetner to taste (I used agave syrup)
Method:
  1. Soak nuts in water for at least 8 hours, I left them soaking for about 20 hours, the more you leave them soaking, the better it is
  2. drain walnuts and blend them until having a creamy texture, firstly without the addition of any other ingredient, and then while slowly adding the water  
  3. filter it into a close-meshed strainer and add the sweetner
  4. keep in fridge into a closed jar 
Ready to drink: 

I served it with a fresh orange and pomegranate fruit salad!!

Raw vegan pear cup

...An easy, practical and also quite original recipe. To eat this pear cup you won't need any teaspoon, tablespoon, fork or knife, you'll only need a towel to cleanse your hands. For this, this recipe results being the ideal one to have a healthy snack, standing....lying on the sofa....studing...when you are in a hurry....sitting in front of the TV... whatever you're doing! 

Also the combination of flavours is very good: the sweetness of pear, the slightly bitter note of dehidrated raisins and the fragrant taste of hazelnuts... It gaves you a good mood!! 

For me, it was the perfect breakfast, to get the energy to restart school after Christmas holidays. Whitout the idea of a so attractive breakfast, I think I wouldn't have pulled out of the blanket even the little toe ...

Ingredients for 4 people:
  • 4 pears
  • 4 tbsp dehidrated raisins
  • 6 walnuts
Method:
  1. Cut the neck of the pear and clean it from seeds and core, using a knife
  2. dig up the body of the pear and put the pulp into a bowl, along with the same neck of the pear, diced
  3. ground walnuts and , togheter with dehidrated raisins, add them into the bowl and mix with pear dices
  4. finally, once you have mixed all the ingredients, with a spoon, fill the mixture into the cavity created in the body of the pear, and press it down well







Ready to bite:

...There's nothing better than getting satisfaction by your actions!

Yesterday, late in the afternoon, getting into the blog I felt very satisfied in seeing how, in only four days, my blog visualisations overcame the number of 100, with 30 visualisations only yesterday.

This wouldn't be appened if you, in your own little, hadn't decided to enter the blog and browse his pages, by chance or by real interest... Thank you very much, please continue like you're doing now!! 

In the meantime, I want to propose you a cheer, looking similar to creamy and crunchy cocoa mini bites (http://rawvogliadivita.blogspot.it/2013/12/creamy-and-crunchy-cocoa-raw-mini-bites.html ) but with nutty and cocoa flafour which, mixed together, combine to make you relive the pleasure of beloved nutella, that for many is now just a dream or a memory. These bites I wanna propose you also can bring to mind the taste of delicious Ferrero Rocher... who had the oportunity to taste them, will always remember them for their creaminess and crunchiness, and also for their marvelous taste of hazelnuts and cocoa. Here's how to prepare them:

Ingredients:
  • 3/4 cup (about 85g) shelled hazelnuts
  • 4 tightly pitted dates
  • 1 full tbsp cocoa
Method:

  1. using a mixer, whisk together hazelnuts and cocoa
  2. add chopped up pitted dates and whisk again
  3. roll between palms the mixture to create bites as big as you prefer








They are great ith vegetable mik ( http://rawvogliadivita.blogspot.it/2014/01/raw-vegan-walnut-milk.html ), with a raw-coconut yoghurt, with raw vegan banana ice-cream (http://rawvogliadivita.blogspot.it/2014/01/raw-vegan-banana-ice-cream-garnished.html) , with many others combinations and also eaten without anithing else!! Now it is up to your ikagination how to make up the dish and how to serve. I arranged it like this:

Raw vegan Oranges tartare

... New year, new years resolutions, new recipes...
One of my new years resolutions is to have 10'000 visualisations of the blog. Is it only a dream or can it really be?? who knows...
Now I only know that I'll have to work hard in give you new, good, beautiful and practical recipes to let you live raw-vegan eating with serenity.
Let's start with something easy and fast then:...

Ingredients for 4 people:

  • 3 oranges (medium size)
  • 20 hazelnuts
  • about 20 grapes


Method: 
  1. peel and cut into chunks oranges. then organise them on the plate as first layer of the tartare
  2. chop 16 hazelnuts and spread them on the oranges layer
  3. cut in half grapes, rimove seeds and cut them again into thin slices
  4. finally arrange some of grape slices in the shape of a flower, on hazelnuts granola and dispose the slices left all around the tartare as if it were a crown. to complete the composition, put one of the kept hazelnuts filling the center of the tartare







 Ready to serve:
