Raw coco-choco truffles

Raw coco-choco truffles

soft truffles with coconut, cacao and almond paste



Ingredients: 
  • 2 tbsp shredded coconut
  • 1 tbsp cocoa
  • 3/8 cup almond paste left from almond milk making
  • 5 pitted dates
  • 1 tsp maple or agave syrup
...to cover..
  • shredded coconut as needed
Method:
  1. blend all ingredients together
  2. handle little amount of dought and roll between palms to make little balls
  3. into a little dish (I used a jar plug) pour some shredded coconut and dip thereinside one ball by one, assuring all its surface to be covered of coconut flakes
  4. carefully put them into a airtight container and store in the fridge or even in the freezer







These bites have a really soft and enfolding texture; The coconut, besides, give to them such a freshness due to which you won't be able to stob eating them and, as it happened to me, they will be eaten in ten minutes or so, without even the time to put them into the fridge ;)

Raw coconut freezy dessert

with coconut and almond milk


Ingredients:
1 cup almond milk
3 tbsp shredded dehidratet coconut
2 tsp agave syrup

Method:

  1. mix all ingredients togeter at room temperature, into a reclosable box
  2. let the mixture rest at least one hour long to slightly rehidrate the coconut
  3. close and put into the freezer
  4. stir every 20 minutes until ice flakes will be formed around every coconut flake
NB. an ice layer will occasionally form on the inside walls of the box; remove and break it every time it happens

....Serve it into small /coffee cup size) portions and relish in front of the fireplace in the tavern <3 .

Raw vegan creamy and crunchy cocoa mini bites

Creamy and crunchy cocoa raw mini bites

...with dates,walnuts and almonds...



















...A big little cheer to give ourselves everytime during the day, dipping it into almond or walnut ( http://rawvogliadivita.blogspot.it/2014/01/raw-vegan-walnut-milk.htmlmilk or relishing it with a cup of creamy raw banana ice-cream (http://rawvogliadivita.blogspot.it/2014/01/raw-vegan-banana-ice-cream-garnished.html) or a fresh-made raw coconut yoghurt* cup...

*I'll try giving you these recipes as soon as possible...

Here is how to make them:

Ingredients: 
  • 1/2 cup unshelled almonds
  • 1/4 cup unshelled walnuts
  • 1/4 cup pitted dates (about 4 medjools)
  • 1 tbsp cocoa + some you'll need to cover the mini balls
Procedimento:
  1. blend together walnuts, almonds and cocoa
  2. add dates and blend again until the mixture becomes uniform like in the first following picture
  3. roll into balls (make them as big as you desire) and roll onto cocoa to make them not stick with each other
  4. remove unneeded cocoa from each ball by beating them onto a surface and keep them into a closed jar, in a fresh and dry place.

Apple and Banana raw millefoglie

Apple and Banana RAW MILLEFOGLIE 

with almond pieces and sprinkled cinammon

And here it is, the blog first recipe!!!.... 

...during Christmas holidays, to get up at six o' clock in the morning after only 5 hours sleep can be a really shock, especially if housework is waiting to be done!
So, what could I do this morning to cheer myself a bit before the 'last torture'??!! There's nothing better than a good and healthy breakfast. With the softness of banana, the crispiness and fresh flafour of apple and with the added twist of almonds and cinammon, my day has changed from down to up!!! 

LET'S TRY IT!!...



Ingredients for 4 people: 

  • 2 small apples (about 150g each)
  • 2 small bananas (about 100g of pulp each)
  • 12 almonds
  • cinammon to taste
Proceeding:

  1. thinly slice apples and bananas and cut almonds into chunks;
  2. construct the millefoglie by alternating an apple layer with a banana one;
  3. finish by putting almond chunks on top and sprinkling the cinammon over it.
Ready to serve; easy, fast, and delicious!!! Perfect for breakfast or even for a mid-morning or late afternoon break.
